It’s Monday…Detox after the weekend with this fresh acai berry bowl. In college, at the University of Colorado, my girlfriends and I were obsessed with Rush Bowls. We couldn’t get enough of them, and often had them for breakfast, lunch, and dinner. Unfortunately, the acai bowl trend hasn’t made it’s way to Chicago. But…they are so easy to make! Whole Foods sells pure acai berry in single serving smoothie packs. Blend with almond milk and a banana and top with your favorite granola!
Acai Breakfast Bowl
- 1 frozen unsweetened acai berry smoothie pack (Sambazon)
- 1/3 cup unsweetened vanilla almond milk
- 1 banana, divided
- 1/2 cup fresh berries
- 1 tablespoon unsweetened coconut
- 1/3 cup granola (I prefer Nature’s Path Hemp Granola Plus)
Run the frozen smoothie pack under cold water for 30 seconds. Place the acai, 1/2 banana, and almond milk in a blender. I use my Vitamix on speed 4 for 30 seconds, or until blended. Top with the other half of the banana, berries, granola, coconut, and a dash of honey.
